You can also come down to San Antonio to the Institute for Texan Cultures and see their "Here be Dragons" exhibit. Complete with a city wide map with the "local" dragons listed. ITC is full of lots of fun stuff as well as taking her to the Alamo.
Just went today with my 7 yr old. It was ... underwhelming. :-( I <3 the Natural History Museum and we had a good day, but we only managed to spend 20 minutes in that exhibit, and 10 of those were because the munchkin's feet got sore and he wanted to sit and watch the dragon movie. Which was stitched together from some Chinese New Year footage and a documentary about the dragons of Eragon.

Has Schuyler seen The Last Unicorn? I watched that movie every weekend for five years when I was a kid. That, and Neverending Story.
